Crudites with Party Goddess Dip
Serves 6
1 ripe avocado, mashed
3 tbsp white wine vinegar
1 garlic clove, chopped
1 tsp fresh lemon juice
1/4 tsp sugar
1/4cup rice milk
1/4cup olive oil
3 tbsp fresh parsley, chopped
2 tbsp dried tarragon, chopped
1 tbsp fresh basil, chopped
1 small shallot, chopped
salt to taste
Arrange brightly colored vegetables (cucumbers, celery, carrots, radishes, red & yellow peppers, snap peas, green onions, broccoli, cauliflower, etc.) on a tray with the dip in the center or close by. For dip, blend all ingredients using a food processor and refrigerate until ready to use.
